Cooking with Herbs

Let’s face it, in these days of tight wallets and limited time, it is easy to get into a rut in the kitchen. Monday is “meatloaf night,” Tuesday is “chicken night,” and so on. By researching the ways herbs interact with each other and different meats and vegetables, you can break out of your unchanging cooking routine. You can transform that boring baked chicken into a Baked Chicken Rosemary that will make your taste buds dance. Once you start exploring the numerous new dishes you can create with herbs, you will wonder how you ever cooked without them.

Most herbs are relatively easy to grow and since we have such a long growing season here in South Carolina, we can grow many different varieties. If you are interested learning about herbs and how to grow them, please attend “Growing and Harvesting Herbs,” which will be presented by the Richland County Master Gardener’s on May 3rd (3-4:30) at Richland County Public Library-Main Branch. Nothing beats the smells and tastes you experience when cutting chives, rosemary or basil from your own kitchen garden to add to your favorite dish.

Many herbs that we grow and enjoy in the United States originated from distant places and have fascinating histories. For example, coriander (also known as cilantro) was used in China as early as 5000 BC, has been found in the tombs of ancient Egypt and grew in the Hanging Gardens of Babylon. If you are not including herbs in your everyday cooking, then you are cheating yourself out of some amazing time-tested flavors and dishes. The Richland County Public Library has a great selection of books on herbs, growing herbs and cooking with herbs.  Listed below are a few of my favorites.
